Spicy Tomato Soup

My boys are IN LOVE with this soup. Its really more like a stew than a soup, but whatev. Its delish. Gotta try it. We omit the Spicy, because my 4 year old can't do Picey :) I got this recipe from Every Day Italian with Giada De Laurentis. Best thing about this? Dinners on the table in half an hour!

What you need:

3 TBSP olive oil
1 small onion, chopped
1 clove garlic,minced
2-3 carrots, chopped(and peeled of course)
1 jar (26 oz) marinara sauce
2 cans (14 oz) chicken broth
1 can white beans- i like great northern, recipe calls for cannellini- drained and rinsed
1/2 tsp red pepper flakes- only if you like spice!
1/2 c small pasta- recipe says pastina
1/2 tsp salt
1/2 tsp ground pepper

What to do:

Warm olive oil in a large soup pot over medium-high heat.



Add carrots, onion and garlic and sautee until soft. I think it took mine about 5-7 minutes to get as soft as i wanted them.



Add the jar of marinara sauce, chicken broth, beans, red pepper flakes, pasta, salt and pepper.



Simmer for 10 minutes or until hot.



ladle into bowls and serve!


This is awesome with some parmesan cheese sprinkled on top and garlic bread :)
