Pork Chop Perfection

If your like me, you know my frustrations when it comes to pork chops. Those suckers don't take marinade, unless its over night, they cook faster than you expect and end up dry, and there isn't anything that goes really well with em... Well, being that I don't have time to think about marinading anything over night (most days i need a 30 minute marinade, if I am marinading) I have been on a mission to find something that makes these things delish. I have now found the secret recipe... Okay, maybe I didn't FIND it as much as I made up a spin from another recipe. 


Candied Pork Chops






What you'll need:


For the pork~
salt, pepper and garlic powder to taste ( no measuring here, just sprinkle some one till it looks good)
about 2 tsp veggie oil ( again, I didn't measure, just poured it in till i thought it looked right)


For the sauce~
6 TBSP brown sugar
3/8 tsp ground cinnamon
3/8 tsp ground nutmeg
6 TBSP unsalted butter


Other ingredients~


4 pork chops
2 TBSP butter (maybe more)
1/2 onion, sliced ( I prefer sweet onions, but a white would work fine too)
2 apples, peeled, cored, diced ( don't dice em too small tho, or they'll cook too fast and be mush)


What to do:


1. Preheat oven to 350. Grease casserole dish. Set aside


2. Heat large skillet over medium high heat, add the veggie oil. Season both sides of the chops with salt, pepper, and garlic powder. cook about 5-6 minutes on each side, or until browned. Transfer to your greased casserole dish.


3. In a medium skillet, melt 2 TBSP butter. Add sliced onions. Sauté until caramelized ( if you need more butter, add more, little amounts at a time). Now, melt 6 TBSP butter in the same skillet. Once its melted add your brown sugar, cinnamon, nutmeg and apples. Mix it all together, and let it thicken up just a little. Pour over pork chops.


4. Bake in your already preheated oven for about 30 minutes.




What to eat with it:


We just paired it with simple Jasmine rice with some butter and salt and pepper
A salad with a sweet raspberry vinaigrette would go nicely too.
