Baked Spaghetti

I realized yesterday that I have been in kind of a cooking funk. I haven't made anything new or fun since we've been here. So I thought I would try something new. Enter BAKED SPAGHETTI. I will admit, i was apprehensive, but it was a MAJOR hit. J didn't love it, he hates meatballs, but BOTH boys did, Eli wanted seconds, and then they ate it again for lunch today!!! It isn't a flavor party in your mouth, but it is pretty tasty.

Recipe:

1 can of tomato soup- yes SOUP, not sauce
1 can of cream of chicken soup- or you can make your own ( if you want a recipe, i have one! just ask for it!)
1 can of milk
1 lb spaghetti noodles
about 2 dozen meat balls
1 cup grated cheddar cheese

In large pot, boil water. Add spaghetti noodles.

In large bowl, combine tomato soup, cream of chicken soup, and can of milk. Stir until all is mixed well. Add about 1/2 cup of cheese. Once the noodles are cooked and drained, stir into sauce. Add meatballs, mix until they are all coated. Pour everything into a greased casserole dish. Top with remaining cheese.

Bake at 350 for 45 minutes.



Frozen meatballs work just fine with this, but if you want to make your own, Here is my recipe:

1 lb ground beef
2 eggs
1 package of ritz crackers
basil
garlic powder
grated mozzarella cheese

mix it all up in a bowl, form little meatballs (usually makes about 24). Place on greased cookie sheet, bake in 350 oven for about 30-45 minutes, or until nice and browned.

Great pairings:

Salad, we prefer caesar or something simple with a vinaigrette dressing
garlic bread
